A little about myself

I'm a voting member of the Canadian Knifemakers Guild,
I currently reside in Elliot Lake and knife making has been my passion for many years. The knives are made for hunting, fishing or for a collector's personal enjoyment. Elliot Lake is a small town in Northern Ontario, Canada, where hunting, fishing and trapping are a part of the local way of life.

In 1981, while working on the Distant Early Warning line in the Canadian Arctic a co-worker showed me a knife he had crafted from a discarded saw blade. He had used Plexiglas washers to make the handle. Seeing this hand crafted knife is what peaked my interest, and got me hooked on creating my own knives.

The first knife I made was fashioned with old truck springs, heated with a torch and hammered out until it took on the shape of a knife. While the camp cook was off duty I would use his ovens to temper my blades.

I'm a full-time knifemaker and welcome the opportunity to create new knives based on the wants and needs of my customers.

Material

I spare no expense when selecting the materials to make my knives. I strive to provide all of my customers with a superior quality item, which can be enjoyed for years.

Steel:

My primary steels are CPM series of stainless steel but not limited to, I also use D2 and a variety of Damascus and Stainless Damascus. Will use others at customers request.

My blades are heat treated to give optimum performance.

Handles:

I use a wide variety of handle material, my preference being Stabilized Burls, Stag, Sheep Horn, Mammoth Ivory. Handles are custom designed to fit the style and purpose of each knife.

Knives

When you purchase one of my knives, you will know that you own a knife which was made by someone who takes great pride in his work, creating the knife out of raw materials. Each knife is individually handcrafted and I strive for superior quality in each knife I make.

If you don't see exactly what you had in mind, let's talk, chances are I can make it for you.
Most days I'm in my work shop so give us a call at the phone number I provided for you

    Salmon Fillet Knife

    Hi Hunter,

I would like to bring you up to speed on what I've done so far. In pic #1 I'm grinding the bevels, because the steel I use for making my fillet knives is so thin I made a jig to use to help me hold the knife ....without it the blade would just bend as I grind. Pic #2 at…

  • Damascus "Sharky" Cactus Fillet Knife

    by Alisha Apr 13th 2013

I wanted to buy a custom fillet knife as a gift for my boyfriend who is a charter fisherman and decided to go with Cote Custom knives because the knives were very unique compared to the other sites I found online. I don't know a whole lot about fillet knives but Guillaume was very helpful in my selection and was very quick to respond to any questions I had. I ordered the sharky cactus knife and he promptly mailed it to me. My boyfriend was very happy and impressed with the quality of the knife and so were all of his fellow fisherman friends! I highly recommend Cote Custom Knives!

    Chef's Knife

    by Adam S. Sep 07th 2012

Gill is a master Knife maker and an excellent communicator. He responded to my request for a custom Chef's Knife almost immediately. I had never bought a custom knife before and Gill walked me through the process from beginning to end. He helped me design the knife and select the best wood and stainless steel. Gill even took pictures of each step in the building process so I could watch my knife come to life. Shipping was easy and I received my knife right on time. Gill is a professional in every sense of the word. The next time I'm in the market for a high quality knife, I will definitely go with Cote Custom Knifes.

  • Dundee Style Bowie

    by Jerry M. Jun 28th 2012

I had known of Gill and his amazing talent for a couple years. Another collector had 1 of his skinners and the minute I laid my eyes on it I knew it was special! The craftsmanship was 2nd to none! I contacted him and commissioned him to create a jewel like my friend had - he told me how much and when he could complete the knife - AND he did exactly as he said and I still have that knife as well! As time went on I had him build others and then ask him about the Bowie - what a KNOCKOUT here - Gill never ceases to amaze me with his talent! To say I am pleased would make me a master of understatement!
