This Chef's knife was a joy to work on, with great customer feedback throughout the entire project. This was tremendous help in keeping with my delivery date. The build first started by choosing the steel, in this case a semi-stainless called CPM D2, a perfect fit for what my customer wanted.The handle material and overall look was a team effort, with both my customer and myself narrowing the choices down.
A few specifications on the chef's knife;
Steel: CPM D2 semi stainless steel.
Blade: Full flat grind, the widest part of the blade is 2 1/4" this allows good knuckle clearance.
Heat treatment: this knife was heat treated with a double temper to achieve a Rockwell C hardness of 60-61.
Handle: Stabilized California buckeye burl, the bolts are 5/16" stainless corby bolts, the handle is also fixed with 3 1/8" mosaic pins this adds a custom touch and helps with extra bonding to the tang.
