Edge grain makes a harder surface than either face or end grain, so is more likely to dull your knives. Makes a fine, economical counter top. Unlike end grain, which is self-healing, it will also scar more easily. Popular for cooking television shows and busy kitchens, edge grain makes for an enduring carving and cutting surface without as much concern for maintenance and regular oiling as end grain.
