A forged-integral chef's knife with either a Japanese style blade and tip ("Gyuto") or a more curvy German style. With stabilized curly maple (or other) handle.
Two steels are available: one is a high-performance steel called 52100 (pictured with the Curly Maple handle and dark end-cap.) The other steel is called W2 and that allows a special heat-treating method that produces a "Hamon" line showing the two different hardness zones in the steel. (Pictured with darker Curly Koa handle and lighter end-cap.)
**Note: I currently have a waiting list running and will not be able to start on this project immediately. Please contact me if you are interested.
Dimensions: about a 9.5 inch blade (240mm),
Steel is 52100 or W2 (high-carbon tool steels - not stainless)
