This is a 3-inch blade paring/boning knife. It is forged from a single piece of top-notch tool steel, it is very sturdy, extremely sharp and very handy for a whole variety of jobs where a small, sharp blade is handier than a big knife: cleaning trout, deboning chicken, cutting garlic, etc. Some people like it so much they put it into a sheath and turn it into their work knife. The blade shape is a modified classic Japanese Deba-bocho. I first made this knife when I was living in Japan, and it has enjoyed success ever since.
